The First Recipe I Wrote Down

A Mainstay

The only thing that has been on all my website versions over the years is a scones recipe. They take about 20 minutes and are hard to mess up. My favorite flavors are chocolate chip, blueberry, or lemon zest + pine nuts, but you can pretty much start with this recipe and add anything.

Mix dry ingredients in a bowl.

Take ½ stick cold butter and chop it up into small chunks.

Mix butter pieces, dry ingredients, ½ cup half and half, and choice of flavor additions.

This will form a dry and shaggy dough. In fact, it may not even come together when using a spoon or fork, but may materialize if you then knead with your hands. We are really looking for a dough that is held together with willpower.

If necessary, add more half and half so that there is just enough moisture that no powder remains. If using dry additions, this is probably necessary. Be careful if adding fruit; this can burst when mixing, adding moisture.

Turn onto a floured surface, and squish dough into a large flat disk (or two small flat disks). Cut like a pizza to get triangle-shaped scones.

You can sprinkle sugar or nuts on top if desired.

Arrange on a cookie sheet. Bake for 12-15 minutes at 400-425 F.

Once they are out of the oven, if you did not add anything on top yet you can optionally add a glaze of melted butter + powdered sugar. Scones will keep for a few days in a tupperware container at room temperature.
